Curry Rice Artichoke Salad
Ingredients
- 1 cup cooked rice
- 1 cup orzo pasta
- 6 green or black olives sliced
- 4 green onions chopped
- 1 can artichoke hearts in water, crained and chopped
- 1/2 cup creamy dressing
- 1/2 tsp pepper
- 1 tsp curry powder
Instructions
- Prepare orzo by cooking in water as any pasta for designated time (it was 8 min al dente for the orzo I used)
- Mix creamy dressing with olives, onions, pepper and curry powder
- Mix in chopped artichoke hearts
- Add cooked rice and cooked orzo while still warm.
- Refrigerate, serve cold.
